It\u2019s a pasta that doesn\u2019t require many ingredients \u2013 just a few carefully selected products are enough to create something truly delicious.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The sweetness of ripe tomatoes, the creamy texture of eggplant, the freshness of basil, and the bold character of ricotta salata come together in a composition that is both simple and refined.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ingredients (3\u20134 servings)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u2022 250\u2013300 g pasta (<a href=\"https:\/\/bellasicilia.pl\/en\/produkt\/rigatoni\/\" data-type=\"link\" data-id=\"https:\/\/bellasicilia.pl\/en\/produkt\/rigatoni\/\">rigatoni<\/a> or <a href=\"https:\/\/bellasicilia.pl\/en\/produkt\/penne-rigate\/\" data-type=\"link\" data-id=\"https:\/\/bellasicilia.pl\/produkt\/penne-rigate\/\">penne<\/a>)<br>\u2022 1 large eggplant<br>\u2022 400 g tomato passata<br>\u2022 1 clove of garlic<br>\u2022 extra virgin olive oil (preferably Sicilian <a href=\"https:\/\/bellasicilia.pl\/en\/kategoria-produktu\/olive-oil\/\" data-type=\"link\" data-id=\"https:\/\/bellasicilia.pl\/en\/kategoria-produktu\/olive-oil\/\">Nocellara dell'Etna<\/a>)<br>\u2022 fresh basil<br>\u2022 approx. 50 g<a href=\"https:\/\/bellasicilia.pl\/en\/produkt\/formaggio-ricotta-salata-porzionato\/\" data-type=\"link\" data-id=\"https:\/\/bellasicilia.pl\/en\/produkt\/formaggio-ricotta-salata-porzionato\/\"> ricotta salata<\/a><br>\u2022 salt<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Preparation<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Start with the eggplant. Rinse it under running water, then cut into approximately 1 cm slices. Lightly salt on both sides and place in a colander for at least 15 minutes. After this time, it should release some moisture. Rinse thoroughly, pat dry, and fry in olive oil until golden.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In the same pan, saut\u00e9 the garlic in olive oil, then add the passata and simmer for several minutes. Add a few fresh basil leaves and some of the fried eggplant, gently breaking it down in the pan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cook the pasta al dente and gently combine it with the sauce.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Serve topped with grated ricotta salata, fresh basil, and a drizzle of extra virgin olive oil.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>FUN FACT \u2013 Who was \u201cNorma\u201d?<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Legend has it that the Sicilian writer Nino Martoglio, delighted by the taste of this dish, exclaimed: <em>\u201cChisti \u00e8 na vera Norma!\u201d<\/em> \u2013 \u201cThis is a true Norma!\u201d<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">He compared its perfection to the famous opera by Vincenzo Bellini, a composer born in Catania \u2013 just like Pasta alla Norma itself.
