Caponata Rusticana is a classic Sicilian vegetable composition in a rustic style — full of deep flavour, natural sweetness and delicate acidity.
Prepared according to a traditional recipe, it combines velvety eggplant, aromatic peppers and onion, immersed in rich tomato passata and top-quality extra virgin olive oil. The characteristic sweet-and-sour balance is enhanced by capers, green olives, raisins, wine vinegar and a touch of sugar, while crunchy pine nuts complete the dish. The addition of celery and tomato paste gives the dish depth and a distinctive Mediterranean character.
