Sugo alla Norma is a classic Sicilian sauce inspired by one of the region’s most famous dishes.

Made with aromatic Italian tomato pulp and gently sautéed eggplant, it delights with natural depth of flavour and a perfect balance between the sweetness of tomatoes and the richness of vegetables. High-quality extra virgin olive oil, fresh basil and a subtle hint of garlic complete the sauce, while a touch of sugar delicately balances the tomatoes’ acidity. Unrefined sea salt enhances the natural character of the ingredients without overpowering them.
