Origin &Artisan Craftsmanship: This cheese originates from Sicily’s pastoral tradition. After producing pecorino, the remaining whey is reheated to obtain ricotta. It is then: – shaped in traditional wicker molds (fiscelle), – dry salted, – pressed to remove excess moisture, – aged for several weeks to several months. During aging, it loses moisture, becomes firmer, and develops a deeper, more pronounced flavor.
