Creamy and delicate, Pesto alla Siciliana is a perfect example of the Italian approach to cooking: a few simple, high-quality ingredients are all you need to create something truly delicious.
Almonds are one of Sicily’s most iconic ingredients. They have been cultivated on the island since ancient times and remain an essential part of Sicilian cuisine – from traditional sweets and desserts to pesto and almond milk. In this recipe, they give the pesto its wonderfully creamy texture and distinctive flavour.
Ingredients
- 2 generous handfuls of fresh basil
- 8 sun-dried tomatoes
- 1 garlic clove
- Pecorino cheese, to taste
- a handful of almonds
- extra virgin olive oil
Method
Add all the ingredients to a blender and blitz until smooth and creamy. Add enough olive oil to reach your desired consistency.
Cook the pasta in plenty of salted water until al dente. We went for fusilli – its twists and spirals are perfect for catching every bit of that creamy pesto.
Toss the hot pasta with the pesto until evenly coated. Finish with a fresh basil leaf and serve immediately.
